The holy Islamic calendar month of Ramadhan has started. Ramadhan Bazaars all over Malaysia will come alive as early as 4pm and closing just after the Maghrib prayers, at around 8pm. We decided to explore one of the Ramadhan bazaars located at Bandar Baru Uda, Johor Bahru where Sultan Johor has recently visited to check out the food stalls. This is the best time to wrap your taste buds around Malaysia’s delicacies such as roti John, murtabak and more street food.

Here are 19 Favourite Local Foods at Ramadhan Bazaars in Johor Bahru.

1. Arabic Kebab
Kebab is a popular Middle Eastern food that is also commonly found in Ramadhan bazaars. You can choose to have grilled meat served with pita bread or plain bread. It consists of vegetables such as onions, cabbages and sauces on top of the meat. They come with 3 sizes – S, M, L.

2. Ayam Percik
Originated from the Northern States of Kelantan, Ayam Percik is a popular grilled chicken dish. Ayam means chicken and percik means splash in Malay Language. Usually available during fasting month only, it is also known as ayam golek in some states of Malaysia. It is a grilled marinated chicken basted with spiced coconut milk gravy which enhances the aromatic taste of the chicken.

3. Assorted Fried Stuffs
Some of the stalls are selling assorted fried foods with skewers like Nuggets, sausages, fish cakes, prawn fritters, goreng pisang, curry puffs etc. At Bandar Baru Uda, you can also spot a stall selling Chinese you tiao as well. They will cut into smaller pieces as per requested and packed them into a small red plastic bag for takeaway.

4. Sata
Sata is originated from Kuala Terengganu. It is a traditional dish with spiced fish meat wrapped in banana leaves and cooked on a grill. Don’t get confused with satay though. This is another type of Malaysian fish cake or we commonly known as otak-otak.

5. Murtabak
Murtabak is well-known in mamak stall. It is a stuffed pancake or pan-fried bread filled with minced meat, chicken or beef, garlic, egg and onion and fried on a griddle until it turns golden brown. It is also a popular street food that locals wouldn’t miss it. You can opt for the ingredients you prefer and they will customize according to your preferences.

6. Barbeque Chicken Wings
The vendor prepared dozens of grilled chicken wings for sale. It was a visual feast that is hard not too missed out. The sweet glazed chicken wings are locals all time favourite dish to enjoy.

7. Satay
The only satay stall at Bandar Baru Uda that offers chicken and mutton flavour selling at RM0.60 each stick. The skewered meats looks tantalizing and we couldn’t resist to buy 20 sticks on the spot.

8. Nasi Goreng & Mee Goreng
The vendor cooked them in a huge cooking pot and it was still pipping hot under the hot stove. When a customer orders, they will scoop it from the huge pot and pack it for them.

9. Agar-Agar
There are assorted colourful agar-agar available too. Ranging from pandan flavour, rose flavour and even chendol flavours are available. It’s all about local flavours and it is selling at RM1 for 3pcs.

10. Sup Tulang
This is the only stall spotted at Bandar Baru Uda selling sup tulang. If you are a fan of sup tulang, you can give it a try. It was too nutritious for me.

11. Air Kahtira
Air Kartira originated from Johor itself. Air refers to water and Kathira is made with evaporated milk pandan flavoured syrup, kathira gum, basil seeds and malva nuts. It is one of the popular drinks sold during the fasting month. There are many versions of this drink which includes, bandung, blueberry and many more. It’s all colouring drinks sweetened with sugar syrup that tempt individual to linger for one more glass. But behold the high sugar intake for this drink.

12. Roti Goreng Lami
It’s my first time seeing Roti Goreng Lami in bazaar. It is deep fried bread stuffed with either chicken or beef. Crispy exterior and what sets it apart is the filling.

13. Roti John
Roti John is also one of the locals favourite besides Ramly burger. It is also a staple during this feasting month. The classic buns are stuffed with meats and black pepper sauces to give an addictive kick. Similar to what you can get in Subway but with a little bit more punch to it.

14. Grilled Sambal Seafoods
The smoke from the barbecuing of seafood will definitely attract you to the stall. Grilled on the spot, you can select what types of seafood you wish to eat and a super shiok chilli sauce will be given together with your meal.

15. Putu Bambu
Putu Bambu is commonly sold as street food from market stalls. It is also known as putu mayam and served cold with pandan-infused rice flour and palm sugar mixed with coconut milk before steaming in a cylindrical bamboo. It is finished off with grated coconut flakes on top to savour.

16. Sticky Rice with Mango & Durian
We spotted a stall selling only sticky rice with mango and durian at Bandar Baru Uda. We had a chat with the vendor and he shared that this is their own recipe inspired by Thai sticky rice. With RM7, you get to enjoy quite a hearty portion though.

17. Nasi Kukus/ Nasi Ayam /Nasi Ampang / Nasi Briyani
Various stalls selling different types of nasi (rice) which includes nasi kukus, nasi ayam, nasi ampang and nasi briyani. All comes with ready polystyrene pack and ready to take away. All these are pre-packed earlier by the vendors before they officially start their business. But some of the stalls prepared it on the spot though.

18. Pulut Panggang
Pulut Panggang refers to grilled glutinous rice in banana leaves. This kuih is made with pulut rice, grated coconut, dried prawns, coriander and belacan. It is known as Malay or Nyonya cuisine and different states has slight twist of recipes. This local treats are all-time favourite street foods.

19. Exotic / Quirks Foods
If you are adventurous enough, check out their grilled hati Ayam ( chicken heart) with special sauce skewer that is available at the stall. Other than this, locals also enjoy paru lembu ( cow lung) with special sauce skewer as well. These are all-time favourite local street foods. The internal organs are boiled then sliced before dousing with spices before deep-fried it.

There are many other stalls offering variety of delicacies to reminisce the Malay local flavours. For non-muslims, it is quite an adventurous to explore the Ramadhan bazaars and find out more about the locals favourite. Although it is not the fascinating hipster foods instagram-worthy, it is definitely a heart-warming food that you can expect for the yearly Hari Raya.

Talad Thai – Authentic Thai Street Food in Bedok Mall

Street food is a quintessential part of the Thailand experience. Wherever you go in the city, there are always plenty of street food serving convenient, delicious and cheap meals. Keeping the mood truly local, the new Talad Thai in Bedok Mall has all the ambience of a Thai street stall – metal tables, old school gates, push carts… A new sister brand under Simple Eats | The Thai Noodle Bar in Changi Airport, Talad Thai prides itself on serving a list of favourite Thai street food.

That stack of Spicy Pork Salad ($6.80) tossed in a tangy dressing was pretty much authoritative. The sliced pork, fish sauce, chilli, lime juice, sugar, topped with slivers of mint, coriander, chilli and onion combined to knock out all the flavours of the Thai holy foursome: spicy, sour, salty, sweet. After having this, the Spicy Egg Salad ($5.80) becomes too mild for my liking. So is the Thai Style Prawn & Pork Shiu Mai ($5.80). It was a little dry, but the fried garlic and soy dipping made up for it.

Pork Slice with Spicy Lime Sauce ($7.80), on the other hand, was a pleasant surprise for me. When you dip the sliced pork and garlic into a green chilli sauce, you get such a burst of flavours instantly. Like a bolognese, Northern Tomato Pork Chilli Dip ($7.80) has so much mellow taste. With sweet, sour and salty that can go perfectly well with minced pork and tomato. You can eat with fresh vegetables. I thought rice crackers work better.

To be honest, I love boat noodles but I find it gimmicky to eat in small bowls. So when Talad Thai serves a full portion of their Spicy & Sour Mixed Noodles ($8.90), I applauded and slurped it all. It’s a bowl of wildly potent broth which was insanely spicy, intensely rich with onsen egg. If I may, this is probably a better version of bak chor mee.

Another dish that wow-ed me is the Fish Maw Soup ($7.80). The soup is rich and tasty, yet not overpowering. Couple with bamboo shoots, mushrooms and shredded chicken, you can choose to have it soup or with bee hoon. Don’t forget to add some quality vinegar to enhance the flavours.

One of the most famous and sought after Thai dishes is Thai green curry. Green curry paste, coconut milk and Thai herbs make this curry an unforgettable blend of delights. The beef brisket was a little too tough, probably because it was cut into too huge pieces. But other than that, the sauce is good with a plate of rice which is necessary to sop up every intricate drop.

The chicken rice of Thailand may not be as famous as Singapore’s, but it is still a popular comfort food. Using their own recipe, Grilled Chicken with Hainan Rice ($8.90) is well-marinated to give a tender and tasty meat. The rice made from chicken stock is milder as compared to our local version. Their homemade chilli sauce is incredible. The sweet-spicy sauce which will have you gobbling your dish down. I thought it is a great accompaniment for other Thai dishes.

End the meal with some decent Thai dessert such as Bread & Coconut Ice Cream ($3.80), Toast with Pandan Sang Kaya Dip ($3.80), Thai Pancake ($2.80), Mango Sticky Rice ($6.80), Sticky Rice with Assorted Toppings ($5.80). For genuine quality of local food, I think Talad Thai is a rising star.

Recipe – Hakka Abacus Seeds (Suan Pan Zi)

Abacus seed is a traditional Hakka dish made with yam that is usually eaten during festivals because signifies wealth. If you have eaten them before, you will know that it requires ALOT of manual labour and patience.

Finally, I got the chance to learn how to make suan pan zi from my gu ma who prepares them every Chinese New Year. Her ratio is simple 2 portion of yam always go with 1 portion of tapioca flour. If you want your abacus seeds to be more QQ, you can probably increase the tapioca flour by a bit. TBut bear in mind not to add too much because you may not be able to taste the yam anymore. Likewise, if you want more yam flavour, decrease the amount of tapioca flour.

In the past, I have always cut the yam into pieces before putting it into steamer. This may lead to uneven steaming and we had a hard time trying to mash it after steaming. So she gave an amazing tip – that is to shred the yam before steaming so that moisture gets into the yam equally. Once it is steamed, it becomes so soft that you can immediately add it into the tapioca flour without having to mash.

And of course the trick to make the abacus seeds is: DO IT WHILE IT’S HOT. Kneading the abacus dough while it’s hot was really challenging for me then. But now, I think my hands are somehow immune of heat already so I do it pretty fast. Don’t try to do shortcut by putting it into a blender please, this dish must be made by hand.

Rong Shu Xia Bak Kut Teh – Their XO Prawn Noodle Soup is not bad!

At Tai Thong Crescent, there is a new bak kut teh stall called Rong Shu Xia Rou Gu Cha (榕树下肉骨茶). Yes yes *clears throat* 路边一棵榕树下, 是我怀念的地方 ~~ But this place is not located under the banyan tree. The owners from Perak, Malaysia call it this name because there are always food stalls located under the banyan tree and he would always meet his friends there to makan. Hence, 榕树 resonates with alot of Malaysian.

Started a few months ago, Rong Shu Xia Rou Gu Cha serves cantonese style bak kut teh, which is also known as Malaysian Bak Kut Teh. Unlike our peppery version, spices and herbs are added into their broth. We went for lunch last week and tried a few of their signature items.

First off, the steaming hot Pork Ribs Soup ($5.90). This reminded me of Restoran Shoon Huat BKT in Taman Sentosa. Not as herbal as I expect, the clear and watery broth is vague and a lot less herbal than the Klang style. So if you are looking for a kick in the soup, this is a little mild. Good thing is, the gentle soup does not snatch the limelight from the sweetness of the pork ribs. It’s quite tender and fall-off-the-bone easily. They currently only serve pork ribs now, but I hope they will add more toppings like liver, intestine and pig’s stomach to go with the soup in future.

To pair with bak kut teh, we ordered Preserved Vegetables ($1.90) and Stewed Peanuts ($1.90). The former is not bad, it still retains its crunch and not overly salty. Because of their opening special, they are having 50% promotion on weekdays from now till 1 July 2016 for selected items. On our day of visit, the Special Fried Pork is selling at half price ($3.20), so we ordered as well. Deep fried till golden brown, it is like biting into popcorn – crispy and flavourful with fatty meats in between.

The sizzling pot of Ginger Wine Chicken ($5.90) is tender while the savory sauce goes great on rice. I would prefer the chicken to be braised a little longer so that the sesame oil can be infused further. The Pig Trotter’s ($5.90) decent with a great mixture of fatty skin and lean meat.

Our meal ended with a bang, when the owners serve us a pot of XO Spare Ribs Prawn Noodle Soup ($5.90). This is like the best creation from Rong Shu Xia! The broth is made from shell and heads, added with intense XO sauce to develop a rich and umami laden flavours. Not the big prawns that you find in some other stalls, but the broth won us over.

Don’t expect much service. I called to ask their opening hours and the waitress was talking to someone while answering my phone. Upon reaching there, I had to repeat my orders to the waiter so many times. Well, I guess it is the teething issue that they are still working on. Look forward to better service next time.

Wan Hao Chinese Restaurant – New Items Tantalizing Tastebuds

Many people take on different perspectives when it comes to Chinese restaurants but whichever restaurant you patronize, the menu is repetitive and overtime, it gets boring so restaurants have to revamp their menu occasionally to uphold their competitive advantage. Besides being located centrally and being easily accessible, we’re pretty sure many of you will be making reservations at Wan Hao Chinese Restaurant at Singapore Marriott Tang Plaza Hotel after knowing how their new items fare.

Beginning with Dim Sum, we had Steamed Crystal Skin Vegetarian Dumpling ($4 for 2 pieces), Deep-fried Prawn Mango Roll ($5 for 2 pieces) and Baked Crispy Honey-glazed Pork Puff with Black Pepper Sauce ($5 for 2 pieces). Amongst the three, the Baked Honey-glazed Pork Puff with Black Pepper Sauce stood out! The pastry puff was crispy on the outside yet fluffy and soft on the inside.

The highlight was the honey-glazed pork that’s stuffed inside. It’s so flavourful, with a tinge of caramelized sweetness, that one serving simply wasn’t enough! Moreover, the black pepper sauce gave it a little kick. This dim sum is perfectly concocted by the chef, Brian Wong! As for the steamed crystal skin vegetarian dumpling, it is handmade to the right thickness and generously filled. It might be a little too bland if you prefer strong flavours. The deep-fried prawn mango roll was well-prepared. We love the well-balanced sweetness from the mango and saltiness from the prawn.

We had the Bird’s Nest Dumpling in Superior Sauce Soup ($28 per portion) after a round of delectable dim sum. Bird Nest is definitely nourishing but dumpling?! This has got to be the first time a chef has creatively combined quality ingredients such as scallop, prawn and conpoy in order to create such a soup dish! We love how smooth the soup is and admire the way this creative chef chooses particular ingredients to perfect not just the taste, but the texture of the soup as well.

Main courses such as Deep-fried Prawns with Pumpkin Butter Sauce ($35 per portion) and Wok-fried Beef Fillet with Angelica and Chinese Yam ($32 per portion) were served after the soup. We heard feedbacks from customers that their deep-fried prawns with pumpkin butter sauce tasted like salted egg yolk sauce but we hold a differing view. We enjoyed the tinge of a secret spice that the chef has added into the sauce. It tasted a little like curry leaves and gave the prawns a unique finish! The Wok-fried Beef Fillet with Angelica and Chinese Yam was another winner! The beef was cooked to perfection and tender.

Moving on to the noodle dish that we savoured – Wok-fried Wanton Noodles with Lobster in Superior Stock ($38 per portion). Well well, the word, “lobster”, must have captured everyone’s attention but to our disappointment, we felt that the taste of the wanton noodles and vegetables overpowered the lobster. Shouldn’t the lobster be the highlight of this dish? Honestly, it’s decent but we felt the lobster could be better.

Last but not least, one can never resist the temptation of desserts! Wan Hao Chinese Restaurant has done a splendid job in offering this unique Chilled Double-boiled Peach Resin with Red Dates ($16 per portion). Notice the jelly-like yellowish and transparent ingredient? This is peach resin, which is commonly used in Chinese medicine. It relieves stress and has an anti-wrinkle skin effect. Peach resin is rich in collagen. It gives the dessert a natural sweetness. Together with other ingredients, this dessert certainly ends your meal on a healthy note. You don’t have to feel sinful for indulging!

3. Almond Cookies
Whenever tourists return home from Macao, they usually bring with them almond cookies. Its unique taste and the low price have attracted numerous tourists to become their loyal fans. Famous bakeries such as Koi Kei, Choi Heong Yuen and Yee Kee sells them. These aromatic cookies come with crunchy bits of almonds and guaranteed to melt in your mouth! Gelatina Mok Yi Kei is a well-known dessert shop famous for their imported Musang King Durian Ice Cream, Chilled Mango Sago Cream with Pomelo, D24 Durian Cake and Serradura. Serradura is a biscuit pudding that literally means ‘Sawdust Pudding’, the taste it brings is far from sawdust. Made with alternating layers of finely-crushed cookies and cream, it is pure satisfaction!

A popular noodle dish in Macao that is packed with bold flavours. The thin noodles are boiled in hot water for about a minute, sprinkled with shrimp roe and lard oil added at the end. We love the chewy texture of the noodles!

Three Lamp District is also one of Macao’s most popular shopping areas and the best place to see how locals live and experience the city’s day-to-day life. The roundabout and its offshoots are packed with small shops, boutiques and street vendors that sells a wide variety of jewellery, clothes, shoes, cameras and electronic gadgets.

5. Visit the Senado Square
Senado Square is named after the Leal Senado Building (known as “Senatorial Pavilion” in the old times, predecessor of the IACM Building). In the centre of the Square stands a fountain, which was constructed in the 70s, and hence its nickname “the Fountain”. It has been Macao’s urban centre for centuries since the port of Macao was opened for trade and is still the most popular venue for public events and celebrations today.

Rebuilt in 1873, Coloane Pier had been a crucial public ferry terminal between Coloane, Taipa and Macao Peninsula, where small vessels were berthed. Now, with bridges built and land reclamation, the aroma of local dried seafood products may remind you of the bygone days at the Pier.

The Ruins of St. Paul’s refer to the facade of what was originally the Church of Mater Dei built in 1602-1640, destroyed by fire in 1835, and the ruins of St. Paul’s College, which stood adjacent to the Church. As a whole, the old Church of Mater Dei, St. Paul’s College and Mount Fortress were all Jesuit constructions and formed what can be perceived as the Macao’s “acropolis”.

I am a huge fan of fish soup. There was once a foodie I knew online introduced me to a famous fish soup stall in Chinatown Smith Street food centre and said it was the best fish soup she has ever eaten, with no milk. The gullible me believed and went to try it only to find myself very disappointed and not to trust her anymore. Where got no milk? The amount of milk and sesame oil added into the soup was so overwhelming that I cannot… Moral of the story: some reviews really cannot be trusted. So I told my friend Melvin about my disappointment and he said, “Let me introduce you to a super good fish soup stall that everyone gave thumbs up!”. I was still skeptical and asked, “Sure or not?”. This time, I am really impressed.

Owner of Mr Fish, Mr Lee, only started selling fish soup in Chinatown about 2 years ago. As a family business, his son, Alan, who works as a It specialist at night helps in the stall almost every day and is now doing most of the cooking. Considering there are so many fish soup stalls in Chinatown, it is really brave for Mr Fish to come in. But they came in strong and are not newcomers in the F&B industry. They used to run a zi char in stall in the west Henderson Road. When they found got a stall in Chinatown, they decided to just focus on doing Cantonese style fish dishes well, i.e. Fish Soup, Black Bean Sliced Fish Hor Fun, Braised Bittergourd and Sliced Fish etc.

We waited half an hour on a late Saturday afternoon for our dishes. When the Fish Head Bee Hoon ($5) finally arrived at my table, I got that whiff of aroma from the piping hot fish stock. They first fried the fish bones and then boil it for hours to get that creaminess and silky texture. This is time consuming but they have insist that no short cut is done – meaning no milk is added. This one really got no milk lah, I am very sure because I am very “sensitive” to lactose products. One sip of the soup, you know it’s worth the wait. They are very generous with huge chunks of fried fish and some cabbage to give a refreshing taste.

Besides the fish head bee hoon, the other best seller is Braised Bitter Gourd and Sliced Fish ($8). Cooked in a black bean sauce, the taste of wok hei is obvious. When bite onto the bitter gourd, you get their crunchy and smoky aroma, with fresh fish slices. It’s so comforting and best goes with rice. I can’t wait to try their Black Bean Sliced Fish Hor Fun which is freshly fried upon order, hence the waiting times increase. But, quality food is worth the wait right?

1. Superb location

Located in the heart of Orchard Road, The St. Regis Singapore is one of Singapore’s most eminent luxury hotels. It’s away from the hustle and bustle of the crowds, giving us some tranquility. And if I want to go shopping, the main shopping belt is just 10 minutes away.

2. The room is spacious lah!

Hand-painted chinoiserie silk wallpaper provides a luxurious backdrop in the beautifully adorned room which was used as my makeup room during my wedding night. I can’t praise Michelle Huimin’s work enough. The red evening gown by Bridal Veil is elegant yet feminine and certainly very different. It is neither too simple or complicated, while giving it a shape-enhancing effect. Plus the fresh roses that my makeup artist Alicia placed on my head, the look was completed instantly.

I was so tired after the wedding dinner and I was so looking forward to return to the hotel’s king-size bed robed with St. Regis signature linens and hugging Jim Thompson silk throw pillows. I love the sofa bed where I can sit myself at the charming bay window, overlooking the city’s view. The rooms are all generously proportioned with plush custom furnishings evoking a sense of timeless elegance.

3. For the arty-farty

I was first intrigued by Dragon-Riding Bodhisattva (2001) by Li Chen located outside the hotel. St Regis houses one of the finest private art collections, with over 100 original works of art from Pablo Piacasso to Joan Miró to Fernando Botero to Cheong Soo Pieng to Georgette Chen, a great representation of both the East and West. If you love art, you should join their 30-minute art tour at 6pm every evening to understand the inspirations behind all the art pieces in the hotel.

4. Luxurious Afternoon Tea at Brasserie Les Saveurs

Elevating the traditional staple of afternoon tea, relish The Grand Astor Afternoon Tea with freshly-baked sweet and savoury scones, hand-made waffles, crepes served a la minute, classic sandwiches and hot delicacies in three-tiered stand, together with a whole array of tantalizing desserts while enjoying a captivating live performance by their resident pianist.

Brasserie Les Saveurs’ Afternoon Tea is available from Mondays to Fridays 3pm to 5pm at $49++ per person, Saturdays 3pm to 5pm at $53++ per person and Sundays 4pm to 6pm at $53++ per person.

5. Give your body some love at Remède Spa

The St. Regis Singapore houses the first Remède Spa outside the United States. The spa offers a wide range of customised revitalising experiences inspired by water and the finest ancient rituals of the bathing art. Because of its location, I will drop by for massage once in a while. I have a specific spa therapist that I go to every time (I paid for my massage of course) because she knows exactly where are my body aches and does it exceptionally well.

During our wedding vacation, we took on a Couple Retreat package which included the Remède Customised Body Scrub (30 Minutes), Remède Customised Massage (60 Minutes), Remède Customised Facial (60 Minutes), Bathing Ritual (30 Minutes), light lunch and selection of fine aromatic teas or champagne.

In addition, Remède Spa also houses Pedi:Mani:Cure Studio by Bastien Gonzalez. A trained podiatrists provides an excellent manicure or pedicure service, smoothing out callouses and dead skin, resulting in pretty happy hands and feet!

6) Excellent Cantonese Dim Sum At Yan Ting

My favourite restaurant in St Regis Singapore? Of course it’s Yan Ting! This is the best dining venue to bring your family and business associates for a meal. The hearty Cantonese fine dining dishes stay faithful to the traditional cooking techniques with immense diversity of ingredients used to bring out the natural flavours of the freshest ingredients.

My recommendation is to head for the Weekend Dim Sum Brunch (from $108++) and be enthralled by delectable dim sum delights. Brunch will always begin with specially crafted signature delights (one serving per pax) – Double Boiled Fresh Abalone Soup with Black Garlic and Wok-baked boston lobster with superior stock.

Following that, you can order as much dim sum as you want. The restaurant has recently added new items. My favourites are Steamed Pork & Shrimp with Black Truffles, Meat Dumpling in Chilli Oil, Fluffy Steamed BBQ Pork Bun, Steamed Pumpkin and Radish Cake. During the weekend brunch, they also offer old cantonese favourites, seafood, poulty, beef and pork, vegetables, rice and noodles, and desserts. For a more intimate affair, you can also opt for the new dim sum set menu with signature highlights. It’s always happy tummy moments whenever I dine there. You can also have a choice of exquisite champagne.

The restaurant is so popular that they’ve created 2 seatings (10:30am – 12:30pm; 1pm to 3pm) just to be able to accommodate as much as they can! Weekend Dim Sum Brunch only available on Saturdays, Sundays & Public Holidays.

7. All pasta fans should head to LaBrezza

Presenting a scrumptious a la carte menu with a wide selection of epicurean antipasti, handmade pastas, tantalising pizzas, and other flavours of Italy, LaBrezza combines traditional culinary techniques with modern inspirations, complete with exceptional seasonal ingredients and fresh product originated from Italy.

Seafood aficionados can partake in an assortment of seafood selection like Astice alla catalan, a whole poached Boston lobster, green peas purée and fava beans, served with Sardinian vegetable salad, black olives and shaved bottarga. I am more impressed with their pastas. Tagliolini all-Astice ($38 piccolo, $51 regular) is in fact my favourite from the menu. It appears to be a simple dish, just homemade silky smooth tagliolini pasta with pan-seared Boston lobster. The garlic and Italian basil add richness and the cherry tomatoes provide acidity and freshness to reduce the heaviness. Taking inspiration from Milan, Chef Luca’s saffron-infused creamy Risotto alla Milanese ($23 piccolo, $30 regular) is also another gastronomic delight of traditional Italian cuisine. Penang Culture – Halal Certified Penang Restaurant Launches New Menu

Being an halal certified Penang restaurant, Penang Culture has been serving up a myriad of Penang favourites for the last five years at its three outlets in Changi Terminal 2, JEM and Century Square Shopping Mall.

In celebration of its 5th anniversary, Penang Culture has launched a new and updated menu to showcase interesting versions of several familiar Penang dishes. These include scrumptious Premium Crab Meat & Salted Egg Fried Kway Teow, appetising Salmon Assam Laksa, Penang Lobster & Scallop Noodles, spicy Penang Fire Wings and mouth-watering BBQ Salmon with homemade spice paste.

The recent show-stoppers are the brainchild of Head Chef Wong Thin Lipp, a 48-year-old Penangite who started his culinary career 20 years ago in several kitchens in the iconic foodie city of Penang. He has been at the helm of Penang Culture since it opened its doors five years ago.

We were invited to try the new dishes at the Changi Airport outlet which is a full-service concept restaurant. I have eaten curry fish balls in Hong Kong, but here, we were served with Penang Curry Fish Balls ($4.95). Wah, even Penang also got curry fish balls ah! Large and juicy fishballs are deep fried before they are steeped in this curry gravy to allow the balls to soak in all the delicious flavours. So why is it the Penang version? Because chef’s rich Penang chicken curry gravy makes up the basis of this dish. It’s a little more lemak and a little more spicy than the Hong Kong version, perfectly matched with piping hot steamed rice.

My favourite for that night is BBQ Salmon ($11.95). Honestly, I would have never thought this is going to be the star for me. It doesn’t look really appetizing to begin with – two slices of Norwegian salmon fillet on a big plate. But but but, I am absolutely wrong. The fillet are first expertly grilled before a layer of Chef Wong’s secret recipe paste is added. That sublime sweet, spicy paste is very wicked – redolent with chilli, lemongrass, onions, ginger flower, assam (tamarind) and sugar. This same paste is also used on a selection of grilled seafood that is also available at the restaurant.

A good plate of char kway teow needs strong wok hei. And it’s best if duck eggs are added to it. Chef must have heard us because he came up with Premium Crab Meat & Salted Egg Fried Kway Teow ($15.95)! Taking its cue from the beloved Penang fried kway teow, this dish is inspired by the latest salted egg craze to hit Singapore.

Tender flat rice noodles are wok-fried with garlic, beansprouts, and homemade sambal (chilli paste) before mashed salted egg is tossed in. Even though no duck egg was used, the salted egg was a good substitute for its unmistakably rich aroma in the smoky plate of noodles. Generous helpings of prawns, squid, fish cake and cockles are then added. The final, and crucial touch, is a lavish topping of meaty mud crab meat and salted egg crumbs before the dish is presented to the customer. The dish also had enough wok hei, the right amount of char and the spice level was perfect. Pass!

Those who love a hearty bowl of hot prawn noodle soup, you will adore this luxurious Premium Lobster & Scallop Noodles ($16.95). The stock is created by slow- boiling a bounty of prawns, crabs and chicken bones for several hours to create the quintessential broth for this perennial Penang favourite. Each bowl is then filled with yellow noodles, scallops, slices of chicken, fish cake, kang-kong, bean sprouts, a hard-boiled egg and a whole slipper lobster before it is filled with the hearty soup.

Classic assam laksa was given a little makeover with the addition of salmon. But Chef Wong still prepares the Salmon Assam Laksa ($11.95) using the same timeless recipe that made it famous in Penang. Mackerel, sardine, ginger flower, laksa leaves, assam (tamarind), hae kor (fermented shrimp paste), garlic, galangal, turmeric and lemongrass are boiled together to form the tasty soup.

Filling a bowl with specially imported thick vermicelli from Penang (it’s slurping good), this is topped with chopped pineapple, slivers of cucumber, lettuce and fresh onion slices before generous slices of Norwegian salmon crown the dish. The gravy is then poured in and drained so all the ingredients absorb the flavour. This is done twice before the bowl is topped up. A drizzling of hae kor provides the finishing touch. Actually, if the salmon were added into the soup base during cooking, it would be more comforting and rich tasting rather than adding it only at the end.

Other well-loved specialities include Penang Rojak ($5.95), Cuttlefish Kang Kong ($5.95), Penang Otah ($6.95), Penang Oyster Eggs ($8.95) and Penang White Curry Mee with Seafood ($8.95) to name a few. The menu also features a section that provides options for customers looking for dishes that are below 500 calories. Items listed here have been approved by the Health Promotion Board (HPB) as part of their Healthier Dining Programme.

Cold desserts like Penang Cendol (from $4.65), Penang Ice Kachang (from $4.65) and new item Gula Melaka Tiramisu with Cendol ($8.95) as well as hot dessert picks such as the Burbur Hitam (from $3.95) are also available.

Other great new beverages on the menu include smooth and creamy milkshakes such as the Cempedak, Durian and Coconut Milkshakes ($6.95 each). I am not a huge milkshake fan but I love the cempedak milkshake so much that I finished the whole tall glass b myself after a hearty meal. Other Penang drinks are the Bandung Chin Chow, Nutmeg Juice and Pink Guava Juice ($4.95 each).

Or, you can try the signature drink at Penang Culture – Ampla Juice ($4.95). Made from the Ampla fruit (Indian Gooseberry), this fruit is full of Vitamin C and contains anti-oxidants. This refreshing drink is served with a sour plum for a salty kick. For an icier rendition on sweltering days, customers can opt for an Ampla Ice Blended ($7.95).

Grandma Ban Mee @ Amoy Street – New Look, Old Flavours

My grandmother used to cook mee hoon kueh when I was a kid. She will prepare the dough and add dong cai (preserved winter vegetables) into it, tore them piece by piece into the boiling soup. That’s one of the sweetest childhood memory. Sometimes, we would eat you mian which we bought from the wet market.

When I visited Grandma Ban Mee (老妈子板面) at Amoy Street, memories start flowing as the stall name resonates with my childhood. During lunch time, the queue for this stall is very long. We decided to give it a try to see if it really brings back some feeling of nostalgia.

Honestly, it’s not really ban mee lor. It’s more like you mee. The menu is straightforward with only 3 options (Chilli/ Dry/Soup) and additional toppings come at extra charge. We were recommended to go for their their signature dry chilli ban mee ($5).

While I have not tried Kin Kin to make a comparison, the noodles here are springy with a moderately spicy chilli paste, egg, ikan bilis and minced meat. You could feel a little heat, but it keeps you going, perhaps due to the fragrance from shrimps. Before you know it, the bowl of noodles is gone!

I belong to the traditionalist who still love ban mee soup ($4), so we had to order it. Typically during my younger days, my grandmother only uses dried anchovies for the soup. But now, the taste profile has changed and we are looking at better tasting soup than before.

Grandma Ban Mee’s clear soup version was lighter than many other ban mee stalls but it’s filled with ingredients like mushrooms, black fungus, ikan bilis and vegetables. My dining partner finds it lack of depth, which is understand-able. But for me, it is probably a similar taste to what I eat at home. I call it “comfort”.

Before I began my post on Ding Ji Mushroom Minced Meat Noodles, here’s a disclaimer – I am not paid to write about them. The story goes, this new bak chor mee stall opens in Bishan, at the same coffeeshop as the famous 284 Kueh Chap. I saw it while I was having supper. Then I went back for lunch and to give it a try.

It was really really good. I ordered the most expensive one from the menu – fish maw soup. The first thought was, it looked like Seng Kee minced pork noodles in Serangoon Garden Market. That is my favourite and it has definitely set the high expectation.

So when the cook prepared my fish maw soup, I watched closely of the ingredients he added. The rich soup base is simmered overnight to get all the goodness from the pork bones. There is generous amounts of sliced pork, pork liver, dried sole fish (ti po), a spoonful of minced meat and egg served in the aromatic soup, with springy noodles tossed in chilli sauce. The ti po probably gives the soul to the broth. To be honest, the aroma of the ti po here is not exactly comparable to the one in Seng Kee. But, it does have that subtle fragrance that many BCM soups are lacking. Plus, I believed that the fish maw used here is a higher grade than Seng Kee’s, because Seng Kee’s version had a strong greasy smell to it.

Even though the mee kia was factory made, they were well tossed with chilli, vinegar, lard oil and sliced braised mushrooms that were spongy with savoury braising sauce. From readers’ comments, I understand that there are many Ding Ji noodle shop around the island but only the one is Bishan and Eunos serves fish maw soup. The rest of the Ding Ji outlets only do Teochew Minced Pork Noodles – which is really not impressive.

Keeping all these factors in mind, plus it only costs $8 for such a generous soup and noodles (cheaper than Seng Kee’s), it was natural for me to share about this stall. At that moment, I am quite certain I have found a very decent bak chor mee / fish maw soup stall that is open for 24 hours and so near to all of us who live in Ang Mo Kio and Bishan. In fact, I was so excited about it that I called my husband and good friend immediately after my lunch to tell them about this “finding”.

But I didn’t expect…

After my lunch, I roughly edited the video I took on my phone and uploaded to Facebook during the unpeak hours. What I didn’t expect, was the amazing feedback that everyone gave. Within a day, the number of shares and views were soaring and the stall eventually ran out of fish maw soup the following morning. Till date, the video itself has got 221K Views, 4369 Shares and 1200 comments.

To be honest, the numbers were too scary. The response was overwhelming, to the extent that the stall cannot cope with it for the first three days. I have read every single feedback, be it good or bad. Thank you for spending time to type it out. Some people queued for 2 hours just to get a bowl of noodles. When people queued for so long, their expectations increased and when the noodles cannot meet their expectations, they get angry. There were people who assume that I get paid to write about this, there were people who called me nasty names, and there were people who take time to defame the stall by pasting the same reply on everyone’s comments. The most ridiculous thing is, some actually boycott it without even tasting it just because the stall belongs to Fei Siong. Come on lah, how childish is that? Pfft.

For those who queued, tried and left disappointed …. it’s understandable. I had it on a quiet weekday afternoon with no crowd, and the cook took his time to slowly prepare my soup and noodles. But after the video came out, the cook had to speed up the cooking just to cater the sudden crowd. There are definitely differences in standards, after all, it’s hawker food. And to be honest, after the video, I didn’t dare to write about it anymore.

So I went back again…

The issue is, because the stall operates 24 hours and they have two shifts to manage the stall. I usually go during weekday lunch and it is cooked by the uncle you seen in this post. There was no problem and I still enjoy it, even though I thought the soup was milder than what I had previously. I guess it was because their turnover time for boiling of soup became shorter, hence it was not as rich and flavourful.

But after reading through all the comments, I went back on a weekend supper to try it 2 weeks after the video was published. From 7pm to 7am, the soup and noodles are cooked by a 74-year-old aunty. Now I can truly understand the frustration of many foodies. Our orders were a little messed up, the noodles were overcooked (because the aunty was trying to decipher whose noodles were those) and the soup was not great. Some of the soups were only lukewarm. It was in fact, disappointing. I never doubt her experience but she was probably overwhelmed by the crowd too.

In conclusion…

I apologize if you were served a less than satisfactory bowl of noodles. I stress that I don’t own the place nor I am paid to write. I am just a happy foodie who wants to share good hawker food that I have found. It’s not unsurprising that we get drastic opinions from two different extremes of the same stall due to consistency argument. But I hope you understand that all reviews are subjective since it is a perception of an experience. 

Like most things, word of mouth is one of the strongest way a restaurant or hawker stall builds its street credibility. But it is also the responsibility for all F&B establishments to uphold the standards. Sometimes, the dish may not suit your liking. For example, I love my chicken rice flavourful and oily, but my husband thinks it is too much and prefers a lighter rice. It’s not wrong. Your food preference and my food preference may be different and can be different. I won’t criticise someone just because they have different views about the same dish. It’s fair comment, in my opinion. But well, obviously some people think their tongue can taste the best dish and if they think it’s lousy, they go all out to penalize and criticize. I don’t agree to such behaviour but I won’t name and shame. Afterall, we are here to build a healthy community of foodies. 🙂

For me, I would still go back for my dry noodles and fish maw soup in the afternoon. It is still tasty in my opinion. In fact, I just brought some of my food kakis there and they love it. In my district, it’s not easy to find a good bowl of bak chor mee like this. A bowl of BCM starts from $3.50 but I really suggest you to try the $8 fish maw soup version because it’s solid. They also serve huge and juicy teochew dumplings. Yes, they open 24 hours.

Start with Bluefin Tuna, Uni & Tobiko Bomb ($22++) that is perfect for sharing among a small group. The taste profile is simple and clean, augmented with well-cooked Hokkaido rice. To enhance the umami quality of the pristine ocean gems, the chefs have concocted a bonito-infused soy sauce to complement sushi. The bonito has been stepped in premium shoyu for 14 days. EFFORT.

Adding a little fun to your meal, you can create your own Chirashi, starting from $15++. The Chirashi Don is breathtakingly beautiful with a base of salmon, tamago and cucumber. So many colours, so many textures, so much fish! Psst… don’t say I never share… Mondays and Fridays are when their shipment of 50kg Bluefin Nagasaki Tuna arrives! Means it is the best time to have your sashimi then!

My favourite restaurant in Emporuim Shokuhin is Burosu Honten Gyoza & Ramen. Translating to “broth shop”, you can customise your ramen by choosing the doneness of the ramen noodles, spiciness level and strength of broth. They have individual booths where the waitress will serve through a screen from the kitchen. How fun, you won’t know when will they appear! Haha!

We went for the Special Ultimate Blend Ramen ($18.80) using a solid soup base rendered by simmering shrimp, lobster and crab shells for at least 11 hours.

Die die must try is the homemade Seafood Gyoza ($7.80) made with delectable seafood fillings in soft gyoza wrap. Each dumpling is so moist and succulent. Dip it with Japanese la yu (chilli oil) and vinegar to complement your meal.

4. Go on a romantic Japanese dining date

Takujo Japanese Dining is a modern Japanese restaurant where you can indulge in omakase-style multi-course meals, or partake in expertly-executed seafood and meat specialties in an intimate setting. The all-encompassing menu spans appetizers, soups and sashimi to nimono (braised dishes) and yakimono (grilled dishes) among others.

We went for the Hon Maguro Kama Shioyaki ($68 – $88++). Imported from Uwajima, the huge Bluefin tuna cheek is grilled and served with ponzu sauce. It is luxuriously soft and flavourful. Don’t forget to add a dash of lemon for a refreshing taste.

Here, you can also see the live seafood trolley brimming with the recommended catch of the day. Simply select the seafood and opt for one of many preparation methods including sashimi, steamed, grilled and even fried.

5. Swish your favourite meat in a bubbling broth

Shabu-shabu is still one of the most appealing Japanese culinary traditions as evident from the crowd in Tsukeru Shabu-Shabu. It is so true when they say woman always have a second stomach for dessert. Even though we were full to the brim from so much food, I can’t resist desserts, let alone Hokkaido Milk Roll ($4.80 per slice). Newly launched a month ago, the pillowy soft sponge cake is filled with generous amount of cream made using Hokkaido milk. It has a delicate sweetness which pairs well with a cup of handcrafted coffee for a lazy afternoon. They have a huge range of freshly baked Japanese-style pastries at the bakery as well.

Nothing says “good morning” like a bowl of oatmeal. Whether you cook it slowly or blend it with fruits into a smoothie, oats provide your body with many benefits. Do you know?   1. 4 cups Captain Oats rolled oats
  2. 2 cups almonds, sliced
  3. 3/4 cup vegetable oil
  4. 1/2 cup honey
  5. 1 cup dried apricots
  6. 1 cup dried raisins
  7. 1 cup dried cranberries
  8. 1 cup cashews, roasted and unsalted
Instructions
  1. Toss oats and almonds together in a large bowl.
  2. Mix oil and honey in a small bowl. Pour over oat mixture. Stir with wooden spoon until mixture is coated.
  3. Spread onto a baking tin filled with baking sheet. Bake in 180 degree celsius, stirring occasionally until golden brown, about 45 minutes.
  4. Remove pan from oven. Stir occasionally until granola is completely cool. Stir in remaining ingredients. Store in airtight container.

  1. 30g Captain Oats instant oats
  2. 125ml Water
  3. 375ml Low fat milk, chilled
  4. 1 teaspoon Vanilla essence
  5. 250g Sweet mango, cut into cubes
Instructions
  1. Soak oats in 125 ml of water until soft.
  2. In a blender add the soaked oats, low fat milk & vanilla essence.
  3. Blend for 1⁄2 minute. Add the mango cubes. Blend for 1 second.
  4. Pour the blended ingredients in the sundaes glasses. Decorate and serve immediately.

Your favourite Asian cuisine gets a modern makeover with their line of ‘chinese hamburgers’ made from their very own Bao Bar. We had their Kung Pao Fried Chicken and Panko-crusted Portobello Baos ($9.80 for two), which came sandwiched between some freshly steamed baos. The kung pao burger was strangely reminiscent of chicken in rojak sauce, but the crispy fried chicken and crunchy peanuts contrasted well with the soft and moist buns. The vegetarian portobello burger was the underdog for us, with the tropical sweetness from the grilled pineapples and meaty portobello coming together to form a veggie burger unlike any we’ve tasted before.

Known for their fusion tapas and laid back vibe, the flavour combination of the Salted Egg Yolk (SEY) Cheese Soft Shell Crab Slider ($14) is as surprising as the location of Lepark. Situated on the top of a multi-storey car park, the unexpected mix of cheese and salted egg yolk came together to form an addictive sauce that we couldn’t get enough of. It was used to drench the chunks of soft shell crab fritters and steamed buns, and we liked how they each came crowned with a crab meatball.

Let’s get right down to it – the Komba Bao ($6) served at Dojo packs a punch. Their crispy mantou buns come stuffed with a generous helping of braised pork belly, which made for a sinful update on this traditional dish. There’s no better way to get into this than getting your fingers dirty and dive straight in. The sturdy and crispy buns made for a nice juxtaposition against the tender chunks of braised meat.

It seems like Bao Makers have found the right formula when it comes to updating classic Asian flavours for the modern palate. Expect a wide selection of their Asian bao creations served in a minimalistic interior. The Bulgogi Bao ($5.30) was served with slices of pork marinated in spicy sauce and topped with spring onions. But the clear winner was the Chilli Crab Bao ($5.80), which is exactly how we would want a chilli crab burger to taste like – packed with juicy crabmeat chunks in a spicy chilli sauce with coriander and fried onions. And extending the same bao obsession to their dessert is the Vanilla Bean Ice Cream Bao ($5) which came with a freshly fried sweet bun and a scoop of ice cream. As confusing as the dish might be – warm, cold, crispy and creamy at the same time – we found ourselves polishing off the dish in mere minutes.

The Pulled Char Siew Sliders ($15) from The Tuckshop was undoubtedly a good combination of homemade buttery brioche buns and savoury char siew flavoured pulled pork, but each of these sliders that works out to be more than $5 a pop makes it hard to enjoy the dish fully. The usual open faced sandwich gets an eastern overhaul in the form of Creamy Salted Egg Yolk Eggs Benedict With Grilled Prawns ($17) from Drury Lane. Resting atop their steamed white buns are two poached eggs and grilled prawns, and drizzled generously with their creamy salted egg yolk sauce. The runny yolk and salted egg sauce was soaked up and paired nicely with the plain steamed buns, but we would have preferred a stronger salted egg yolk taste to come through from the sauce.

Simply Wrapps was started by three colleagues who spent collectively more than 50 years in the corporate world. By chance, they landed an assignment together in the very exotic city of Dubai, UAE and that was the time when friendship was developed and dream was created.

Being in the corporate world for many years, they worked hard but did not have proper nutritional food to keep them going. Especially for people who are always on the go with no time for a proper seat down meal, it became more difficult. Hence, they created Simply Wrapps to put all the goodness of different vegetables into a wrap or salad bowl with healthy dressing.

They have 5 different kinds of wraps – plain, wheat, spinach, lemongrass and tomato basil. The most popular one is wheat, that uses wholewheat grain imported from USA. I enjoy the Classic Caesar ($10.90) with crunchy romain lettuce, grilled chicken, parmesan cheese, croutons and boiled eggs.

Taking inspiration from their travel, they have created many international sauces. For some local flavours, the Singapore Mixed Seafood Salad ($11.50) is a great option. Even though the chilli crab dressing was a little too mild for me, it comes generously with shrimps, crab stick, carrots, cucumbers and cherry tomatoes. So much goodness in a bowl!

5 Favourite Dishes from Pizza Hut’s New Menu (With Healthier Options)

What are your memories with Pizza Hut? For me, it’s definitely one of my favourite lunch places during school days. Constantly striving to bring more to the table for everyone to enjoy, Pizza Hut has launched their new menu featuring not just their well-loved classics, but also a whole lot more new dishes for the discerning tastebuds.

Here are our five favourite dishes from Pizza Hut’s Menu:

1. Shrimp & Spinach Pizza

Besides keeping the classics like Pepperoni Pizza and Hawaiian Pizza, Pizza Hut has got also other great pizza flavours like Shrimp & Spinach Pizza for the shrimp lovers. It is adorned simply for the colourful ingredients – succulent spiced shrimps, baby spinach and sweet pineapple rings baked in a blend of rich pesto and tomato. The thick pizza distinctly highlights the rich flavours of pesto and tomato sauce, allowing the sauce to coat the dough well. To experience a cheese explosion in every bite, top up another $6 for regular pizza to enjoy a combination of mozzarella, parmesan and cheddar cheese stuffed in the crust.

The dough is made in at least 2 batches per day. The chefs start work as early as 7am! No overnight dough is used, whatever that is leftover will be discarded. While having your pizza, don’t forget to order some sides such as Sweet ‘N’ Spicy Drumlets ($7.90 for 6 pcs or $10.90 for 10 pcs) and Salmon Croquette ($7.90 for 5 pcs).

2. Hut’s Chicken Pie & Mash

Hut’s Chicken Pie & mash consist of simple and standard ingredients, but how they taste depends on their preparation. The Hut’s Chicken Pie & Mash ($13.50) features creamy mashed potato stacked with a layer of buttery puff pastry and together with traditional chicken and mushroom casserole in creamy alfredo sauce. Here, the mashed potatoes are thick and smooth. The dish may be a bit heavy going down alone, but satisfying and tasty when shared with friends. But if you prefer something more local, go for the Curry Chicken Pie & Mash ($13.50). It comes in a colourful plate of chunky potato cubes, tasty curry chicken, onions and eggs served in an open pie.

3. Pulled Beef Penne (EDITOR’S CHOICE)

Pizza Hut’s Executive Chef counts the Pulled Beef Penne ($14.90) as her current menu favourite. Why? Not only is the pulled beef perfectly tender and richly flavoured but it also beautifully contrasts against the texture of the cabanossi sausages. Top up additional $6 with a soup of the day, salad and soft drink; or $5 with a soup of the day and soft drink.

Slow cooking the meat takes hours, for the meat must become tender and contribute its silkiness to the sauce to coat with the pasta. Not only it’s Pizza Hut’s Executive Chef favourite dish, it was our favourite dish for that night too. We like it so much that we ordered a second serving to share okay! I love how the aromatic sauce coats each penne beautifully with sausages lifting the flavours even more.
Pizza Hut is committed to serving the best ingredients. That’s why the salads are made from the freshest garden greens, the pastas from 100% wheat semolina and dishes such as the Beef Goulash are made from 100% Australian
beef.

4.Tropical Dream Pizza

Slay the fat by opting for whole-grain rice instead of pilaf rice in the Curry Zazzle Baked Rice or in place of French fries with the Roasted Spring Chicken.

What’s more, 3 slices of the regular-sized Hand Stretched Thin pizzas count less than 500 calories, no matter what toppings you choose. No wonder all the ladies who ate with me love it! These fresh, hand stretched thin crust are specially made with lighter dough that brings out the full flavours of the toppings.

The Tropical Dream pizza ($20.90) is a sunny combination of chunky honey chicken ham and roasted pineapples with roasted onions, cream cheese and a drizzle of mango puree. To me, it is like the dessert version of Hawaiian pizza with amazing mini-bursts of flavours! The chicken ham was really chunky with a good bite and the tangy mango puree makes it super refreshing. Cream cheese is very soft and it has a tendency to burn if it was baked for a long time. But I must say that Pizza Hut has done it really well and the smoothness from the cream cheese kinda gel the flavours together. The pizza dough was thin and crispy, it doesn’t feels heavy at all.

The next time when I am back here, I would love to try Wild About Mushrooms ($20.90) with mouth-watering medley of velvety truffle mushrooms topped with cherry tomatoes and fresh rocket leaves on creamy alfredo sauce which is also one of their healthier options. Or, if you are a cheese lover, go for the Quattro Cheese Deluxe ($20.90) featuring savoury chicken pepperoni baked on a bed of mozzarella, parmesan, cream cheese and cheddar, topped with turkey bacon and fresh rocket leaves.

5. Apple Tart with Ice Cream

Calling all dessert lovers! Pizza Hut introduced a new dessert – Apple Tart with Ice Cream ($7.50). Made upon order, what arrived is a tempting plate of apple tart with buttery crust, chunks of green apples, cinnamon sauce and a scoop of vanilla ice cream. A perfect combination of hot and cold, I love its buttery crust the most!

Michelin Guide Singapore – Which Hawkers have Bib Gourmand missed out on?

Yesterday, Michelin Guide Singapore has released their Bib Gourmand selection. 17 hawkers made it to the list. While we haven’t tried them all, some of my makan kakis are already questioning about the selection process and quality of some of the hawker stalls. For the team of MissTamChiak.com, it’s more baffling why are some of the good hawker dishes not included in the list. After all, our hawker culture is what makes Singapore stand out from the rest of the world and we think the list on Bib Gourmand is not enough to represent the vibrant hawker scene we have in Singapore. 

Nevertheless, we present you with the list of 17 hawker stalls from Bib Gourmand before sharing our thoughts on which other hawker stalls should be included in the list. 

Bib Gourmand Hawkers

1. Depot Road Zhen Shan Mei Claypot Laksa
Address: Blk 119, Bukit Merah Lane 1, #01-75, Alexandra Village, Singapore 150119

This hawker originated from Depot Road’s Zhen Shan Mei Claypot Laksa. The present owners did a little tweaking to the recipe from the original owners but loyal customers would still continue supporting. The gravy is spicy, lemak and very tasty. It’s hard to resist not slurping till the last drop.

2. A Noodle Story

A Noodle Story is a contemporary take on traditional wanton noodle as the bowl served here has some influence from Japanese Ramen. Consisting of thin and springy Hong Kong style wanton noodle, Japanese charshu, Japanese-style braised egg and potato-wrapped prawn fritter, the flavours are enhanced by lemongrass scented oil, konbu and dried shrimps.

3. Famous Crispy Curry Puff

Curry puffs here are handmade and always served hot. There are only two options available – sardine and the usual potato filling. The unique crust has many layers in a circular pattern and comes generously filled. This is the perfect tea-break snack so do go before 3pm or you’ll run the risk of leaving empty-handed.

4. Hong Kee Beef Noodle

This hawker has been selling beef noodles for almost sixty years, since his father’s time. There are soupy and dry versions but many prefer the latter for its flavoursome gravy. Beef served here is succulent so look forward to a satisfying bowl of dry Beef Kway Teow when your craving kicks in.

5. Hoo Kee Rice Dumpling

Bak Chang can be overly-oily and taste “gelat” at times but Hoo Kee’s bak chang is well-prepared and doesn’t contain fatty meat. Chunks of lean meat are used, complemented by chestnuts and mushrooms that are of good quality. The pork is tender and savoury while the chestnut gives the overall taste a tinge of sweetness and crumbly texture.

6. The Fishball Story

Using only pure yellow tail fish with no flour, the result is a firm texture with a natural sweetness of the fish. Coupled with sambal, shallots and pork lard, this bowl of fishball noddle is so delicious. Hawker for the first time, we’re glad that up till this day, Douglas still has the right formula towards making a simple dish extraordinarily yummy. Read more about it here.

7. Wedang

Serving Indonesian food and satay that tantalize your tastebuds is what this hawker does best. It’s hard to find tasty and authentic Indonesian food in Singapore so we’re lucky to have this hawker whipping up good and simple Indonesian fare to satisfy our cravings.

8. Famous Sungei Road Trishaw

This slurp-worthy bowl of Fruit Juice Crayfish Mee Siam comes with a very light gravy and we simply love indulging in a light, spicy, sweet and sour gravy. One mouthful is so full of flavour that it gets addictive and you probably can’t resist another bowl. We haven’t got the chance to try it, perhaps we have to do it now before the queue starts forming!

9. Na Na Curry

As its name suggests, this hawker is famous for their fish head curry and pork rib curry. The gravy is done till the right consistency. It is spicy but not tongue numbingly so. Made with fresh spices and fresh coconut milk, no wonder its strong fragrance lingers in the air. The chilli which packs a good punch too.

10. Chey Sua Carrot Cake

Using the traditional cooking method passed down from the previous generation, Chey Sua only does white carrot cake. They will pan fry one side till crispy while leaving the other side lightly fried. Chilli sauce is pan-fried together with the crispy surface, which makes your dining experience so much more enjoyable. Read more about it here.

11. Tian Tian Hainanese Chicken Rice

With smooth and tender chicken cuts and warm, fluffy, fragrant rice that is good enough to just eat with the chilli sauce, this hawker is prolly one of the most prominent chicken rice stall in Singapore. Tourists all over the world flock to Maxwell Food Centre just have a plate of this goodness.

12. Shi Hui Yuan Hor Fun

At the mention of Hor Fun, this hawker will always pop to mind! The Hor Fun was excellent and you should go for the pork ribs, mushroom and chicken feet hor fun.

13. Alliance Seafood

Newton Circus, in recent years, has been blacklisted for being a food centre that touts tourists. Well, there are still hawkers like Alliance Seafood that maintains the quality of their food for customer’s gratification. It’s a good stall to patronize for dinner with a big group of friends and family due to their wide array of food items offered.

14. Tiong Bahru Hainanese Boneless Chicken Rice

Usually, boneless chicken flesh is flattened with a cleaver after deboning the chicken so it’s hard to expect sinking your teeth into a juicy chunk of meat. That aside, many were impressed by both white and roasted chicken as they were prepared so well, with tender and tasty flesh. The sauce was savoury, with a hint of sweetness and the chilli gives a really good kick.

15. Hong Heng Fried Sotong Prawn Mee

Hardcore fans of fried noodles will enjoy this dish but others might find it a tad too dry and lacking in flavour. The sotong was chewy and fresh though. This hawker has done a great job in removing the pungent seafood smell from their sotong and prawns. 

16. Balestier Road Hoover Rojak

Fear Factor aside, we’re pretty sure only locals can appreciate what goes into this dish. We can’t imagine tourists taking a bite of century egg without wincing or squirming in their seats. Hoover Rojak is fantastic as they still add jellyfish in the mix and use Torch Ginger Flower to give it the typical rojak fragrance. Yummy!

17. Liang Zhao Ji

This hawker selling braised duck always has a snaking queue, whether on weekdays or weekends. Braised duck is quintessentially a Teochew dish and the “lor” here is thick enough, with a balance between sweet and savoury flavours. The subtlety of 5-spice aromatics managed to permeate through the rice and gave the overall dish a thumbs up!

Which Hawkers have Bib Gourmand missed out on?

Besides the list of hawkers in Bib Gourmand list, we feel that there are some other excellent hawkers whom we thought should be in the list but didn’t make it. How can our char kway teow, roti prata and bak chor mee not appear in the list? That’s our unique dishes too! Perhaps, it is time for the Michelin inspectors to explore our country a little more. Here’s some of our favourite hawkers which we felt should be included.

Sungei Road Laksa

This is one of the last few existing hawker which still uses a charcoal burner to prepare their super delicious broth. You can smell the spices in the gravy – sweet yet mild spicy and infused with coconut flavours and hae-bi in it! The crunchy bean sprouts added texture to this already perfect bowl of Laksa. Hong Chang Eating House

This is a hidden gem that is a MUST TRY! Their sambal stingray is BBQ-ed till crisp on the outside, yet retaining a moist flesh within. The sambal is the killer but it’s so shiok! The porridge with kong pao frog leg was impressive as well. The umami dark sauce has a nice smokiness and you get the ultimate enjoyment with piping hot porridge. Read more about it here.

Tai Hwa Bak Chor Mee

Behold the ultimate bak chor mee – mee kia done al dante, springy and don’t have the alkaline taste which is present in many noodles. The sauce, packed with chilli and vinegar, is a robust mix of savoury, spicy and sour. Lastly, the fresh ingredients used were well-marinated and cooked to perfection. There is also fried ti poh which is very rare nowadays! Simply irresistible! Seriously, how can this not appear in the list? Read more about it here.

Famous for their Mutton Briyani and Chicken Briyani, this hawker is very crowded during lunch time so go earlier as their mutton, especially, is usually sold out after lunch. Both meats are flavourful and tender. We liked that the spices used for the rice were evenly distributed and almost each grain was close to uniform in colour. Haig Road Putu Piring

Putu Piring is the Malay version of our Kueh Tutu. The hawker uses gula Melaka for the filling and serves with grated coconut. The queue here is always horrendous! Be patient as the hawker cooks every plate individually, to ensure that it’s served up fresh and warm. A plate of char kway teow consists of cockles, bean sprouts and fried pork lard to complement the tasty egg. You can detect the distinct wok hei and this hawker is definitely worth the wait. One of our best zichar in Singapore, THIS SHOULD BE IN THE LIST. The wok hei in their Moonlight Hor Fun is excellent. You get a smoky flavour from the flat noodles that was stir fried with lard, chinese sausages, prawns, squid and dark sauce. Add the egg yolks in the middle, mix it up with the noodles and you get an excellent plate smooth and delicious hor fun. Read more about it here.

It’s hard to find artisanal prata nowadays but this hawker is admirable! He makes his own dough, cooks the curry and flips the prata all by himself. So much work with just a pair of hands! Savour My Dry Laksa at Oscar’s Local Delights, Perankan Highlights Buffet

A few months ago, when Ferne, director of marketing communications of Conrad Centennial Singapore, asked if I am keen to do a laksa dish for their Oscar buffet promotion, I gladly took it on.

It’s such a privilege to have your dish in a buffet line! How cool is that? After months of discussion, we are proud to showcase the laksa recipe at Oscar’s Local delights with Peranakan highlights Buffet Promotion from July 11 to August 31, 2016.

Together with Senior Chef de Cuisine Alex Siah, we came up with a special Dry Laksa Pasta with Spicy Coconut Espuma Foam in martini glass. Chef Alex is really creative. I basically gave him a dry laksa recipe and he gave a modern touch to it by having spicy coconut espuma foam. How creative is that!

Two weeks ago, I went into the kitchen and cooked our dry laksa dish together with Chef Alex. It’s always hard work behind the kitchen. The wok turner in a commercial kitchen is always too heavy for me. Plus the intense heat from the wok… it really makes me admire chefs more.

We first stir fried the dry laksa noodles. Then we cooked another pot of laksa broth and poured it into the syphon. It’s interesting to see how our laksa broth becomes espuma foam! That’s my first time using the siphon.

Here is our fusion version of the laksa. I had the chance to cook some noodles behind the live buffet station and it was really fun! It feels like I am the laksa aunty just for the day! HAHA! It was really hard work because we have to first add the dry laksa in the martini glass, then cook the ingredients in boiling water before adding the espuma. But glad it was all worth while when some of the diners gave me 90/100. YAY! MORE LAKSA FOR HER! HAHAHA. So if you want to ask me where to have laksa? Come Conrad lah, and try my dry laksa!

Thankfully with Chef Alex Siah, we are also able to enjoy good Peranakan dishes during the buffet promotion. Chef Alex comes from Malacca and every dish at the buffet is prepared by Chef Alex Siah with his very own recipes that were passed down from generation to generation. At the promotion, you can tuck into a tantalising array of traditional Peranakan dishes such as Ayam Buah Keluak, Pongteh Ayam, Udang Masak Assam, Nonya Chap Chye, and more.

Reflecting our mixed culture heritage, Ayam Buah Keluak combines tender chicken chunks with keluak that is braised with a heady mix of Nyonya spices, resulting in a fragrant gravy that bursts with flavours. Babi Pongteh may seem unassuming with subtle flavours, but the pork belly melted in my mouth. Dip a slice into their homemade belachan, and you will want to eat more!

Babi Pongteh is another signature Peranakan dish. The melt-in-the-mouth braised pork is cooked with fermented soya bean. The pork looks unassuming but trust me, once you have a mouthful, you will definitely ask for a bowl of steamed rice, and then, drizzle the sauce over the rice. You know what I’m trying to say?

And then, don’t forget to have some nonya chap chye that is cooked till soft and flavourful. Aiyo the sambal belachan at the side is a winner. The tangy taste of the lime cuts down the intensity of spice but still very good.

In addition, savour other Singaporean favourites such as Roast Duck, Fried Kway Teow, Carrot Cake, Oyster Omelette, Sweet and Sour Crispy Pork Belly, Spicy Chilli Crab with Crispy Fried Bun, Sambal Sting Ray served on Banana Leaf, Chicken and Beef Satay. I like the eggy oyster omelette, it is good for international diners who love having the omelette more than the oysters.

Oh did I tell you, sweet and sour pork is one of my favourite dishes. It is served with chunks of meat doused in a sweet and tangy sauce made from tomato sauce, tinned pineapple, cornflour, onion and capsicum.

Satays are good in Oscar’s with tender chicken or beef on skewers. The marinade — a rich and flavorful one, is the key to good satay. For accompaniments, satays are served with a peanut dipping sauce and a spoonful of refreshing cucumber relish. End on a sweet note at the live Teh Tarik station or spoil your tastebuds with a selection of Nonya Kuehs and local desserts such as Bubur Pulut Hitam or Cheng Teng.

Having opened for 2 years, Yechun Xiao Jiang Nan specializes in Jiang Nan cuisine. Executive chef Li Jing is from Yang Zhou and he ensures that every dish in the menu is kept true to the flavours of Jiang Nan. One example is the Shredded Tofu ($6). Each tofu shred is poached over water for at least 3 times to prevent lumps and tossed with soy sauce and sesame oil. Another appetizer worth trying is the Fresh prawns with Fermented vegetables ($12.80). The fermented vegetables elevated the crustacean flavours and goes well with the crunchy prawns.

For comforting flavours, share a pot of Duck confit with Bamboo shoots ($26). Instead of goose, the restaurant air dries the duck and mixes it with vegetables in the soup. What you get is a thick and tasty broth with some sweetness from the carrots. Each piece of duck meat is sliced to an optimal thickness so you get that good bite.

Opened since last October in Marina Square, Dragon Bowl has been dedicated to making made wonderful contemporary Cantonese cuisine while preserving the traditional flavours. One of the must try dishes is the Dragon Bowl Peking Duck. It is all about that crunch on the skin that lead up to tenderness, with fatty richness unifying the two. The duck is marinated with spices overnight, air dryied and roasted till perfection.The process is not easy, but I am glad Dragon Bowl has done it well.

Dragon Bowl also served deep fried prawn done in many ways. We had the one coated generously with thick and creamy pumpkin sauce, enhanced by curry leaves. Another method was to serve it with cheese, so kids will enjoy them more. Other dishes to try include the Homemade Beancurd with Bamboo Charcoal Powder, Braised Pork belly in Special Sauce and many more. There’s also a are also wide range of Liquor, Wine, Beer and Sho Chu specially selected to go well with their cuisine.

Mouth Restaurant has been serving traditional Hong Kong dishes with a modern twist at an affordable price since 1989. The Scallion Sakura Chicken is my favourite. Using only Sakura Chicken of a selected size which gives the best meat with less fat, the chicken is poached in a traditional way to ensure meat is juicy and tender. Remember to dip your chicken chunks into the tasty scallion sauce as it complements the dish very well.

While some other Chinese restaurants create different flavours of Xiao Long Bao, Mouth Restaurant decided to be creative and created 6 different Har Kau flavours instead.The traditional prawn dumplings come in multiple colors ranging from the more adventurous, Squid Ink, Spinach and Sweet Potato flavors to the novel Pumpkin, Carrot and Original flavors. These colourings are made from natural food ingredients, which create a delicious oriental taste with a twist. End your meal on a sweet note with the Legendary Baked Liu Sha Bao. Peel it open and let the custard centre flows. YUMMM…

Since opening last December, Kai Garden, helmed by one of Singapore’s most sought-after chefs Fung Chi Keung, has already established itself as the premier destination for Cantonese cuisine. I have been singing praises of their Garoupa with Lobster Broth after I had it in the restaurant. With fresh garoupa presented in front of your table, the staff will help you ‘swish’ the fresh slices into the lobster broth. The broth has been boiled for hours making it rich and addictive. I reckon any kind of fresh seafood works well with the broth.

One of the must try dim sum items include Charcoal Shen Jian Bao ($6.80). Pan fried over a hot plate, its moist meat filling with a slightly chewy skin and crispy fried bottom was so good. They also serve Peking Duck with 5 creative sauces like Black pepper, Seafood sauce, Sesame sauce, Mixed sauce and Original. Not only that, there are 5 different types of skin to wrap the Peking duck with. The skin is made with natural ingredients and come in flavours such as Charcoal, Beetroot, Spinach, Pumpkin and Original. That marks the start of a colourful weekend. ☺

Ocean Restaurant at RWS Launches New Set Menus by Cat Cora

With the recent screening of ‘Finding Dory’, I believe aquariums all over the world are seeing a drastic increase in the number of visitors, both locals and tourists alike. ‘Finding Nemo’ formed part of my childhood and I’ve always been curious about marine life. Don’t ask me why but my favourite animal’s the great white shark! I used to camp in front of Discovery channel with a notebook, especially during shark week. Okay, back to today’s focus – Resort World Sentosa’s Ocean Restaurant by Lady Iron Chef / Celebrity Chef Cat Cora.

Located inside the S.E.A. Aquarium, just beside the Open Ocean habitat, I was awed by the panoramic view of the enthralling marine world. There are two huge glass panels for diners to be mesmerized by over 100,000 marine animals. The colours and materials in Ocean Restaurant’s main dining room echo the deep sea palette.

Ocean Restaurant serves Mediterranean-Californian cuisine with an Asian flair and a sustainable ethos. The new menu uses sustainably-sourced seafood and local seafood produce which echoes S.E.A. Aquarium’s beliefs in conservation and caring for our oceans and marine life. Celebrity Chef Cat Cora, who has hosted, guest-judged and appeared in numerous variety programmes works closely with resident chef Yew Eng Tong to curate a menu that impresses your senses of sight, smell and taste.

Start off with their small bites such as the Kueh Pie Tee or Ravioli. The former is a spice crispy cup containing braised jicama (Mexican turnip), Laksa “sphere” and coconut foam. You get a crispy texture with delicious creamy fillings. The latter consists of pickled radish, tuna tartare, caviar and charred aioli. This is a very refreshing start to a meal and whets your appetite for more food.

My favourite was the other small bite served – Parma Ham Aerated Crème. It’s so fluffy and bursting with flavours and I simply love the crunch! You’d be surprised that only sherry onions, croutons and crispy pork skin goes into the making of this amazing small bite!

Ocean – Harmony of Sea Life is beautifully presented in a shimmering shell. You get a combination of different seafood and roe with three different sauces/dips. There’s Salsa Vert, a kind of green sauce made mainly with herbs and tastes a little minty. There’s the very refreshing watermelon sorbet, as well as, charred aioli. There’s a distinct taste of ginger essence in this dish too. Trust me, it tastes as good as it looks.

Sous Vide Scottish Salmon is decorated with edible flowers. The raw salmon, cured in salt, sugar and dill is drizzled with chilled cauliflower milk and topped with horseradish crème and roe. This is one of those times where you can’t bear “destroying” the beautifully-curated dish but you know it goes into your stomach eventually.

Crisp Brick Duck Foie Gras, as you all know, refers to duck liver and this is an acquired taste. In Singapore, I’ve known many people who shuns away from this luxurious food. Consisting of tamarind-balsamic reduction, ginger candy, cocoa nib and puffed buckwheat, I would give this dish a thumbs up! It tastes light and smooth and smells heavenly.

Lobster Milk is actually lobster wanton, topped with coriander and Mentaiko and sprinkled with Szechuan pepper. I enjoyed sinking my teeth into the fresh and juicy lobster wanton which is generously filled. Milk and Szechuan pepper sounds like a strange combination but both of these actually complemented one another for this dish.

The following two dishes are my favourites! First up, New Zealand Sustainable Fresh Cod Fish with a ratte mash that people often mistakes as scallop. I’ve to admit that the mash potato does indeed resemble the shape and even, the colour of a scallop. The taste is enhanced by crustacean aioli and caviar vinaigrette.

The final savoury dish before dessert was the highlight of the meal – Braised-Seared Beef Short Rib and Charred Grilled Wagyu Primecuts. These succulent slabs of meat were perfectly done medium-rare. You can feel the juices gushing out while chewing the meat. It’s so flavourful, accompanied by puff barley and oatmeal, as well as, carrot-kaffir (citrus) puree. I wished I had the stomach space to indulge in more meat!

The 6-course Entice set dinner ends with Chocolate Ends dessert. Consisting greek yoghurt, grand marnier-mango “sphere”, cocoa nib tuile and tarragon gelato, this dessert was so well executed. I was delighted by the contrasting taste of rich, dark chocolate, paired with the slightly sour-ish taste from the yoghurt and mango.

3-course Delight set lunch costs $58++ while 5-course Leisure set lunch costs $72++. 4-course Excite set dinner costs $128++, 6-course Entice set dinner costs $158++ and 8-course Inspiration set dinner costs $208++. There’s even a 5-course Vegetarian set dinner available at $108++. The 6-course Entice set dinner was so satisfying that I decided to take a stroll back from Sentosa to Vivo City.

This restaurant is great for couples due to the romantic atmosphere but I’m sure family and friends who love marine life and are concerned about ocean conservation will be interested to dine here too. You just can’t take your eyes off the two large glass panels and you’ll get a kick out of trying to guess and recognize the type of fishes you see swimming by every moment.
