I lived in Ang Mo Kio all my life but I have never heard of First Culinary Restaurant, until my friend Jasper arranged for a food tasting session a few months ago. Apparently this Chinese restaurant in Ang Mo Kio ITE College has been around for more than 2 years! The menu is extensive, to the extent of being messy. So here are some recommendations.
First to arrive on the table was Mini Buddha Jump Over the Wall ($28). It was a good start with a variety of premium ingredients like dry scallops, abalone, mushrooms, sea cucumber and more. Each ingredient is socked individually and the soup is boiled using mother hen and pork bones. For the price and ingredients used, this is really impressive!
The well caramelised char siew shines in a beautiful red hue and it is really fatty. The chef managed to roast it till the fats just melt in your mouth. Crispy Skin Roast Pork ($14) is decent, with crackling skin and tender meat.
If you love beef and garlic, then you have to order the Signature Garlic Beef Cube ($18 small; $27 medium; $36 large). Seared to perfection, the meat is meltingly tender. It was a little salty that night (perhaps the chef got a little excited) but definitely goes well with some steamed rice. Another dish that goes well with rice is the Hong Kong Style Soon Hock (seasonal price). You can’t go wrong with fresh fish and superior soy sauce.
First Culinary definitely understands Singaporeans’ love for crabs because it has 10 different types of crab dishes on its menu! The one Imperial Crab (seasonal price) was similar to gan xiang crabs but we would have loved for the spices to stand out more. However, the sweet flesh of the crab meat was the perfect accompaniment.
The Hakka Yam Abacus ($12 small; $18 medium; $24 large) won my heart because it has got the fragrance of yam and a chewy texture. The preparation is tedious, hence you can’t find it easily these days.
